May 7: Former Rose Bowl Champion Keith Davis featured speaker at the Pot of Gold Luncheon benefiting Rainbow Days, Inc.

Rainbow Days will host its 29th annual Pot of Gold Luncheon at the Westin Dallas Galleria on Thursday, May 7, 2025 to benefit the programs of Rainbow Days.
The doors open at 11:00 a.m. for the 2026 Pot of Gold Luncheon & Silent Auction viewing, with silent auction bidding, and the luncheon program will begin promptly at noon. This year’s goal is to raise $302,500 for Rainbow Days to continue providing critical services benefiting thousands of at-risk and homeless children and youth across the Dallas area each year. Table sponsorships start at $2,500 and individual tickets for the luncheon are $250 per person, both of which are available to purchase online at Pot of Gold Luncheon 2026 | Rainbow Days or by phone at (214) 217-3833.

Rainbow Days is thrilled to announce the 2026 Pot of Gold Luncheon Keynote Speaker is Keith Davis. Keith Davis is a former Rose Bowl Champion and NFL player whose story of perseverance has inspired millions around the world. As the founder of The Winners Organization, Keith has shared his message of hope and resilience with audiences in more than 68 countries—reminding people of all ages that “it’s never too late to make a U-Turn in your life.”
For the past sixteen years, Youth Equipped to Succeed (YES) has proudly partnered with Keith to bring his powerful message to people across North Texas and the entire country. His life stands as a testament to the difference that one caring mentor, one moment of encouragement, and one choice for change can make.
While playing college football at USC, Keith excelled both on and off the field—serving as team captain, earning All-Conference honors, and leading the team in tackles. He went on to win two championship rings, including the Rose Bowl Championship, while maintaining the highest GPA on the team and graduating with a degree in Business Finance. After college, Keith signed an NFL contract with the New York Giants. Yet, due to a career-ending injury, his path was redirected.
Today, Keith uses his platform to inspire multitudes of students, parents, and educators across the globe, to rise above adversity and build lives grounded in resilience, hope, and connection.


Rainbow Days is honored to have Francisco Ramos as the 2026 Pot of Gold Luncheon Event Chair. In addition to being a dedicated member of Rainbow Days’ Board of Directors, Francisco is an accomplished senior executive with extensive experience in retail real estate, business development, and strategic growth, having held leadership roles at JPMorgan Chase, Taco Bell, and GNC. Fluent in English and Spanish, Francisco is passionate about bringing people together to support children and families across the Dallas community. Grounded in faith and family values, proud father of two children. Rainbow Days is thrilled to have him spearheading the event.
Rainbow Days is thrilled to have Leticia Espinoza and Jill Sabeh returning as the 2026 Pot of Gold Luncheon Silent Auction Chairs. Originally, from California, Leticia Espinoza started with Rainbow Days as a volunteer and has continued her services for the last several years. Leticia’s inspiration to get involved in her community stems from years of watching her mother passionately work as a first-grade teacher in the inner city of Denver, Colorado. She reflects that same level of passion in her volunteer work for Rainbow Days, as she serves children the way her mother did before her. Leticia currently lives in Garland, Texas and works as an event consultant for Murad Auctions.
Jill Sabeh is a seasoned professional with 14 years of experience at PwC, where she has honed their skills in tax depreciation services. Jill is a proud Texas native; sports fan with a particular love of volleyball and soccer. Jill is thrilled to serve as the co-chair for her second Rainbow Days Silent Auction.
The Pot of Gold Luncheon raises needed support for Rainbow Days programs through sponsorships, individual seats, auction bidding and donations. The annual luncheon is a cheerful and celebratory event that features an inspiring keynote speaker, special performances from the Rainbow Days children and moving program testimonials for an anticipated 500 guests in attendance. The Pot of Gold Silent Auction, which will be filled with an estimated $70,000 worth of fantastic items, will open online a week before the event on April 29, 2026.
